Easy and Keto-friendly Low-carb Gluten-free Bread

Learn how to make gluten-free low-carb keto bread that is crusty on the outside and fluffy on the inside.

First of all, let me clarify. I am not currently on a Keto diet, but I always try to maintain a relatively low carbs intake. But these low-carb, gluten-free Keto bread are not for me but for my mom.

My mom was diagnosed with Hashimoto’s thyroiditis. And she has to cut gluten out of her diet. She was also sugar and yeast intolerant, making most of the bread on the market not suitable for her.

So this is a recipe I developed for her. I tested the portion of coconut flour and flaxseed flour a few times. Too much coconut flour and the bread will turn out too soft or even sgggy in the middle. Too much flaxseed in the dough, and the buns might be too dry.

After a few trials and errors, I managed to find the sweet spot. I’ve also added a few ingredients, like coconut flakes and milk powder, to enhance the flavor. It’s totally optional. You can make the bread without them or switch with nuts or other ingredients to your liking.

If you are on a Keto or low-carb diet, this gluten-free bread recipe is a must-try. It’s not only beginner-friendly, but it also requires minimum effort. With an oven, you can make these fluffy low-carb buns in no time.

Ingredients ( for 15 buns)

  • Coconut flour, 55 gram
  • Golden flaxseed flour (flaxseed meal), 40 grams
  • Psyllium husk powder, 20 grams
  • 3 Eggs, medium-sized
  • Coconut oil, 1 tbsp
  • Baking powder, 10 grams
  • Salt, 1 gram
  • Apple cider vinegar, 2 tsb

Optional:

  • Whole milk powder, 5 grams
  • Coconut flakes, 10 grams

How to make perfect, fluffy low-carb buns

  1. Break and whisk three eggs (room temperature) in a bowl. Add one tablespoon of coconut oil and mix.

Note: If you want your bread to be extra fluffy and soft, you can separate the egg white and yolks. Beat egg whites until stiff and then mix with the yolk.

  1. Add coconut flour, golden flaxseed flour (flaxseed meal), and psyllium husk powder. Use a spatular to stir till even.

  1. Add salt, baking powder, apple cider vinegar, milk powder (optional), and coconut flakes (optional) to the mixture. Pour 200ml of warm water while stirring.
  2. Add water gradually while mixing until there’s no dry powder visible.
  3. Knead the dough for about 5 minutes to make sure all the ingredients are evenly combined. Then cover the dough with a wet towel and let it sit for 15 minutes.

Note: Due to the lack of gluten and yeast, the dough will not rise as regular ones. But the process allows the baking powder to work better and makes the bread more fluffy.

  1. Divide the dough into 15 portions. Each weighs about 30 grams. Then round them one by one by rolling with your palms.

Preheat the oven. Meanwhile, place parchment paper on a tray. Transfer the small keto balls to the tray.

  1. Set the oven temperature to 350°F or 175°C. Bake for 30 minutes. When the baking is done, take the buns out and let them cool down to room temperature before serving.

A few notes on making the perfect gluten-free low-carb buns

  • Make sure to take the eggs out from the fridge before whisking. Eggs of room temperature combine with the dry ingredients better.
  • Add water to the mixture slowly. Because water absorption of different coconut powder may vary, it’s hard to say how much water it requires to make the perfect dough. My tip is to add water gradually in a small amount each time. Knead until there’s no dry powder and the dough is in shape.
  • If you are baking a loaf in a mold, extend the baking time to 40 minutes. This will ensure the dough is cooked thoroughly and not moist in the center.

How to store the low-carb, gluten-free buns?

You can make more one time and store the buns for later.

Put the buns in a sealed container or a ziplock bag. And keep them in the freezer for up to 7 days.
