Easy Chinese Scallion Pancake Made With Dumpling Wraps

No dough needed. Make the perfect scallion pancake with leftover dumpling wraps!

Scallion pancakes are one of my favorite childhood breakfasts. I remembered waiting in line every day at the pancake stand on the way to school. One bite, the taste of scallion and the crispy pancake could keep me going for the entire morning.

But I have procrastinated to make scallion pancake because roller dough is not my thing, especially in the busy mornings.

Until one day, I had some wraps left making the pork dumplings. So I decided to use them for something different. With some trials and errors, I finally managed to turn them into delicious scallion pancakes. 

And most importantly, it’s super easy and won’t create a fuss in the kitchen. And you don’t need to worry about making (or buying) too many dumpling wraps anymore.

How to make scallion pancake without a dough

Instead of making the dough from scratch, we are going to use leftover dumpling wraps. You can also use store-bought wraps.

Ingredients

  • Scallions
  • Olive oil
  • Dumpling wraps
  • Salt

Utensils

  • A rolling pin
  • A pan
  • A knife
  • A spatular

Step-by-step guide to make dumpling wrap scallion pancakes

Wash the scallions and chop them finely. If you love your pancakes filled with aromatic scallions, prepare more. I use two scallions for three pancakes.

Prepare your work surface. Cover it with a little bit of flour to prevent the wraps from sticking.

Take 4 pieces of dumpling wraps and gently roll it to a bigger, flat circle. Set them aside for later.

Take the first piece of wrap and brush it with a bit of olive oil. And then sprinkle it with scallions and a little bit of salt.

Put the second wrap on top of the first one. Then repeat the brushing and sprinkling. 

Repeat the process for the third wrap, then cover it with another wrap.

Gently flatten the wraps with a rolling pin or your hand. Make sure the layers are sticking together. 

Use a knife to slice the wraps into stripes. Layer the strips on top of each other.

Gently roll the strips together to form a round shape. Then use the heel of your palm to press and flatten it.

If you like your pancake super crispy and thin, you can also use a rolling pin to flatten the stripes even more.

On a pan, heat one teaspoon of olive oil. Pan-fry the scallion pancake for 3 minutes or until brown. Then flip it and repeat the same process.

Remove the scallion pancakes and enjoy. You can also serve it as a side of the Hong Kong-style borscht soup. The sweet and sour recipe adds another layer of taste to the pancakes.

Is this scallion pancake recipe vegan?

Yes, all the ingredients in this recipe are vegan-friendly. If you are looking for a quick vegan breakfast, these scallion pancakes are a good fit.

Which part of the scallion should I use?

In this recipe, I use the green part of the scallions I grow on my balcony. You can also use the white stems. Just make sure that it is finely chopped, so it stays in the wraps.
