Chinese-styled Oven-baked Pork Jerky

No dehydrator? Don’t worry. Follow this easy pork jerky recipe to make it at home.

If you ask someone about their favorite snack, you will probably hear him say jerky. It is so popular that you can find it in a supermarket or any gas station store.

Whether you are going to the gym or driving long distances, jerky is a great snack as well as a protein source.

So why make jerky at home while it is so available?

First of all, you have full control of your ingredients when you make your jerky. That means you can eliminate artificial seasoning, extra salt, or preservatives.

And you get to control the favor. Add spices for an extra kick. Or leave out maple syrup if you are on a low-carb diet. Making homemade jerky is like a journey of trial and error. And you are the captain.

Once you learn how to make the first batch, you can move on to different proteins. You can make jerky with beef, pork, chicken, venison, etc. Make in bulk as a quick snack between meals, or take it with you for outdoor activities.

How to make pork jerky at home?

There are two ways of making jerky at home.

The traditional way is to use a dehydrator. The other one is using an oven.

Because I don’t have a dehydrator at home, I am going with the second method today.

Which cut of pork should I use?

When making homemade pork jerky, you will want to use lean meat. The fat in the jerky will make it harder to dry out, especially when you don’t have a dehydrator. And the more fat it contains, the easier it may go bad. Thus pork loin may be perfect for making Chinese BBQ pork, but it would not work for pork jerky.

Pork tenderloin is ideal for making pork jerky. It is not the leanest cut. But it absorbs the flavor well when you marinate it. Plus, it is cheap and available. Just make sure you remove the fat and grain before processing it.

Making pork jerky without a dehydrator

Ingredients

  • 1 lb pork tenderloin
  • 1/2 teaspoon salt
  • 1/4 teaspoon five-spice powder
  • 1/4 teaspoon black pepper
  • 1 tbsp sugar
  • 1 tablespoon soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1/2 tablespoon cooking vine, preferably Shaoxing Wine

Preparing the pork

Rinse the pork a few times. Remove the fat attached to the surface and chop it into small pieces.

Prepare the pork - making pork jerky at home

Grind the pork in a food processor. Then add salt and black pepper. Marinate for 30 minutes.

To absorb additional water, use a kitchen towel to press on the minced pork gently.

Add oyster sauce, light soy sauce, dark soy sauce, and stir evenly.

Baking pork jerky

Lay the mixture on a piece of parmesan paper. Cover it with another piece and roll out the mixture thin and even.

How to make pork jerky at home

Preheat the oven to 320°F (160°C). Bake for 10 minutes on each side.

Take it out, brush honey, or maple syrup evenly on one side. And sprinkle it with white sesame.

How to make pork jerky at home

Turn up the heat to 370°F (190°C). Bake for 5 minutes. Then do the same thing for the other side.

Take the jerky out and let it cool down to room temperature. Cut it with a scissor to the shape you want.

Enjoy or store the strips in a container for later.
