Okra season it is! The vivid green color brings me all the way back to my childhood. My grandma used to make okra salad in late summer. The earthy flavor of okras combined with the sour dark vinegar, I just can’t have enough.

Today I am bringing you another easy okra recipe – okra steam egg. You need two ingredients – okra and egg, plus some kitchen staples. Within 10 minutes, you will have a plate of appealing and tasty steamed egg.

This recipe is perfect for breakfast because it takes literally no time to prepare and cook. If you have a boiler, or a pot, you can make it at home!

  • 3 Okras, medium-sized
  • 2 eggs, medium-sized
  • Cooking oil, 1/2 tsp
  • Salt, 1/4 tsp
  • Cornflour, 1/2 tsp
  • Rice vinegar, 1 tbsp
  • Water, 1/2 cup

  1. Wash the okras and cut of the steams. Cut the okras crosswise into thin slices.

  1. Soak the sliced okras in rice vinegar to remove the slime. 
  2. Meanwhile, break and whisk two eggs in a bowl.

  1. In another bowl, mix water, 1/4 teaspoon of salt, 1/2 teaspoon of cooking oil and 1/2 teaspoon of cornflour. Add in the eggs and whisk for 1 minute. Then transfer to a plate.
  2. Use a kitchen towel to drain the sliced okras. Gently add them to cover the egg mixture.

  1. Bring a pot of water to boil. Place the plate in it and cover it with plastic wrap or a plate. When the water is boiled, turn down the heat to medium-low and steam for 5 minutes.

  3. Take the plate out and enjoy! You can also add light soy sauce to taste.
