Steamed Pork Patty With Water Chestnut and Mushroom

Easy and authentic Chinese steamed pork patty that combines sweetness, crunchiness and fragrance all on one plate. Perfect for dinner tonight!

If you’ve read my Chinese steamed fish recipe, you know how much I love steam dishes. They are quick, easy, and healthy. If spending hours for a single dinner is not your thing, you are going to love steamed dishes.

And today, I am remaking steamed ground pork. Unlike the Fang Hua steamed pork, this time, I am adding water chestnuts. 

On one plate, you will have the savory ground pork, sweet and crunchy water chestnut and springy mushrooms. Sounds good? Let’s start making this traditional Chinese pork patty.

What are water chestnuts?

Chestnuts are originated in India and are commonly seen in Southern China. In Mandarin, they are called 荸荠 (Bi Qi) or 马蹄 (meaning horse feet in Cantonese). 

Eaten raw, they are sweet and fresh. And they are super versatile. For example, water chestnut cake is one of the most loved dim-sums. You can also see them in meatballs, dumplings, sweet soup and stir-fry dishes. 

How do water chestnuts taste?

Don’t get fooled by its name. Water chestnuts are nothing similar to chestnuts except their tough, dark brown shells. Taste-wise, they are far different. 

Unlike the buttery texture of chestnuts, water chestnuts are crunchy and crisp. They are also a bit sweet and juicy. Even when they are cooked, they remain crisp, making them the perfect ingredients for different recipes.

Are water chestnuts good for health?

Water chestnuts have surprising health benefits, too!

100 grams of chestnuts contain 12% of the recommended daily fiber intake. They are also rich in antioxidants and can help fight chronic diseases.

Alternatives for water chestnuts

The reason why I add water chestnuts in the pork cake is for its sweetness and crunchiness. 

If you can’t find fresh water chestnuts in your local supermarket or farmer’s market, you can replace it with carrots or simply go without it.

How to make the Chinese steamed pork patty? 

Ingredients for the pork cake recipe

  • 200 grams ground pork
  • 4 medium rehydrated shiitake mushrooms
  • 6 fresh water chestnut, peeled
  • 20 grams fresh ginger
  • Salt and pepper, to taste
  • 1 tsp cooking oil

Marinade:

  • 0.5 tbsp soy sauce
  • 1 tsp cooking wine

Instructions

First, we are going to get the minced pork ready. 

  • Add the marinade to the ground pork and let it sit for 30 minutes. 
  • Meanwhile, soak the dried shiitake mushrooms in warm water. It takes about the same time for them to rehydrate.
  • When they are fully soaked, squeeze the additional water out. Remove the stem and mince.

  • Wash and peel the water chestnuts. Mince them and set aside.

  • Peel the fresh ginger and grate it finely. 

We are adding the ginger in the pork mince later to balance the favor. I use a grater to make sure that we won’t end up chewing a mouthful of fiber.

Now that all ingredients are ready, it’s time to get our pork patty done.

  • On a plate, pour in the marinated ground pork, grated ginger, minced mushrooms, and water chestnuts. 
  • Give the mixture a good stir and flatten it with a spoon. Add 1 tsp of cooking oil on top and sprinkle some salt and pepper.
  • In a wok or a pot, boil 3 to 4 cups of water. Put the plate in on a steaming tray once the water boils. Cover the lid and steam for 15 minutes.
  • Open the lid, take the plate out and enjoy!
