Beef And Tomato Stir-fry: Easy Chop-suey Dish For Dinner

Easy Cantonese beef and tomato stir-fry recipe that is better than Chinese takeouts

If there’s a dish that is perfectly savory and sweet, it has to be beef and tomato stir-fry. 

Growing up, I am always a sweet tooth. That’s why we always have tomatoes in our fridge. Tomato and egg stir-fry, tomato soup, tomato salad…this nutritious vegetable brings freshness and sweetness to the table.

And today, we are making this quick and easy dinner dish: beef and tomato stir-fry. Get your rice cooking because this chop-suey dish will be ready in no time.

Ingredients

Beef and tomato stir-fry - ingredients
  • 4 medium-size tomatoes
    250 grams of beef tenderloin
  • 1 tbsp ginger, grated
  • 1 scallion, chopped
  • 1 tbsp cooking oil
  • 1 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tsp corn starch
  • 1 tsp sugar
  • Salt and pepper, to taste

Instructions

  1. Wash the tomatoes. Cut into small wedges.
  2. Cut beef tenderloin into thin slices. In a bowl, add corn starch, light soy sauce, salt, and pepper. Mix evenly and marinate for 1 hour.
  3. Rinse the scallion. Remove the stem and chop finely.
  4. Coat a pan with cooking oil. Heat up the pan on medium-high heat till it starts to smoke.
  5. Add grated ginger to the pan and stir till fragrant.
  6. Add tomatoes and stir for 3 minutes. 
  7. Then add the marinated beef to the pan. Stir-fry for 2 minutes until it starts to turn brown.
  8. When the tomatoes start to soften, add oyster sauce, sugar, a pinch of salt to the pan. Continue to stir for 2 minutes.
  9. Add the chopped scallion to the pan. Stir a bit and transfer to a plate. Serve with rice and enjoy!

What kind of beef should I use?

Just like stir-fry beef with king oyster mushroom recipe, I use beef tenderloin in this dish. Stir-fry is a quick cooking method. And beef tenderloin will remain tender within short cooking time. 

If you are using tougher cuts like beef shank or beef round, make sure it is marinated for at least 30 minutes. This step will help prevent it from toughening up.
