Chinese Stir-fry King Oyster Mushroom With Beef and Bell Peppers

An easy Chinese king oyster mushroom recipe for dinner

When I was a kid, rice was still considered to be a dinner essential. But picky eaters like me, this bland starch is never my thing. 

So my mom would come up with different dinner recipes to make rice more acceptable. And this Chinese stir-fry beef is one of her signature dishes. 

The beef and king oyster mushrooms are fully soaked in the sweet and savory oyster sauce. I couldn’t have enough of this stir-fry dish.

That’s why I recreated my mom’s king oyster stir-fry recipe with beef. I’ve added bell peppers to provide an additional kick in favor. Give it a try!

Ingredients

Chinese Stir-fry King Oyster Mushroom With Beef - main ingredients

  • 1/2 lbs Beef tenderloin,
  • 2 King oyster mushroom
  • 1/2 Red bell pepper
  • 1/2 Green bell pepper
  • 3 cloves Garlic
  • 1 tbsp grated Ginger
  • 1 gram Baking soda 
  • 1 tbsp Soy sauce
  • 1 tsp Sugar
  • 1 tbsp Cooking oil
  • 2 tbsp Oyster sauce
  • 1 Scallion, chopped
  • Salt and pepper, to taste

Instructions

  1. Dice beef tenderloin into small cubes. Rinse the beef cubes with water. Put in a bowl.
  2. Add 1 gram of baking soda and 1 tablespoon of water to the beef. Mix and put the bowl in the fridge to marinate for 30 minutes.
  3. Take the beef cubes out. Wash them with running water. Then use a kitchen towel to dry the beef. In the same bowl, add 1 tablespoon of soy sauce, 1 teaspoon of sugar, 1 tablespoon of oyster sauce, pepper and grated ginger. Marinate for another 30 minutes.
  4. Meanwhile, wash the king oyster mushroom. Remove the stem if there’s any. And then dice into cubes in similar size as the beef tenderloin. 
  5. Boil a pot of water. Parboil the king oyster mushroom for 2 minutes.
  6. Wash the red and green bell pepper. Half them to remove the seeds. Then cut the peppers into small slices.
  7. Use a knife to smash the garlic. Remove the peel.
  8. Heat a wok or a pan on medium-high heat. Add 1 tablespoon of cooking oil to the pan and coat the pan evenly.
  9. When you start to see small bubbles surfacing the oil, add garlic and stir for 1 minute.
  10. Add the sliced peppers. Stir until they begin to soften. It takes about 2 minutes.
  11. Add king oyster mushroom and sauté until they start to turn brown.
  12. Finally, add the marinated beef. Stir for 3 minutes. Add 1 tablespoon of oyster sauce, 3 tablespoons of water and a pinch of salt. Sprinkle the chopped scallion.
  13. Stir for another 5 minutes until the beef is thoroughly cooked, and the king oyster mushrooms turn brown and soft. Transfer to a plate and serve with rice.

How to tender beef?

Beef is a tricky protein to work with. Sometimes I have the perfectly tender meat that doesn’t require much preparation. But sometimes beef can be tough and almost unchewable.

  1. Pick the right cut

Not all beef cuts are born equal. Some cuts are fattier, and some are tougher. I use beef tenderloin for this stir-fry beef recipe because it is naturally more tender than beef shanks.

  1. Marinate beforehand

In this king oyster mushroom recipe, I use baking soda as the marinade. It helps to break down the tissue, and the meat can still be soft with short cooking time.

If you don’t have baking soda, you can replace it with lemon juice or vinegar.

  1. Cut against the grain

This way, the tissue within the meat will be broken. This method works especially well if you are slicing beef.

  7. Smash the garlic. Remove the peel.
  8. Heat cooking oil in a wok or a pan on medium-high heat. When it starts bubbling, add garlic and stir-fry for 1 minute.
  9. Add the sliced peppers. Stir until they begin to soften. It takes about 2 minutes.
  10. Add king oyster mushroom and sauté until they start to turn brown.
  11. Add the marinated beef. Stir for 3 minutes. Add 1 tablespoon of oyster sauce, 3 tablespoons of water and a pinch of salt. Sprinkle scallions on the surface.
  12. Stir for another 5 minutes until the beef is thoroughly cooked, and the king oyster mushrooms turn brown and soft. Transfer to a plate and serve with rice.
