I am addicted to dumplings. They are perfect for breakfast, lunch or dinner. Honestly, I can have dumplings three times a day and not get bored. 

One thing that makes dumplings so loved is their versatility. You can switch the ingredients and create your own recipe: pork dumplings, beef dumplings, or vegan dumplings. You can also boil, steam, or put them in a soup. 

So today I am bringing you pork dumplings with wood ear mushrooms and water chestnut. I will be sharing a dumpling filling formula so you can create your own!

How to make pork dumplings?

How to make pork dumplings? fillings and wraps

Ingredients

(for about 50 dumplings)

Filling:

  • 1bs of ground pork
  • 10 grams of dried wood ear mushroom
  • 2 scallions
  • 20 grams of fresh ginger
  • 6 Water chestnut, medium-sized

Water chestnut is crunchy and slightly sweet. It goes so well with ground pork. Check out the pork patty with water chestnut recipe to learn more about cooking this amazing ingredient.

Seasoning:

  • 1 tsp cooking oil
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • A pinch of salt

Others:

  • 2 tsp of cornflour
  • 50 dumpling wrappers

Instructions

  1. Soak dried wood ear mushrooms in warm water for 30 minutes. When the Jew’s ears are completely softened, remove the stems and chop finely.
  2. Wash the scallions and fresh ginger. Remove the stems and the skin and chop finely.
  3. Peel the water chestnuts and mince. If you don’t have water chestnuts, you can replace them with carrots.
  1. In a bowl, mix ground pork, cooking oil, soy sauce, and salt. Marinate for 20 minutes. Then add cornflour and 1 tablespoon of water. Stir clockwise for 1 to 2 minutes.
  2. Add all the minced vegetables and stir evenly.

How to cook dumplings

There are 3 most common ways of cooking dumplings: boil, steam, and pan-fry. Follow the following instructions to cook dumplings your preferred method.

How to boil dumplings

  1. In a pot, boil 3 to 4 cups of water. Turn on medium-high heat and bring to boil.
  2. Use a spoon to stir the water clockwise. Add the dumplings to the swirl so they won’t stick to the pot’s bottom and potentially break the skin.
  3. When the water is boiled again, add 0.5 cups of tap water and let it boil.
  4. Repeat, and when you see all the dumplings resurface, transfer them to a plate. Serve with vinegar or soy sauce.

How to steam dumplings

  1. Prepare a steaming set of your choice (a steamer or a wok+steaming tray) and bring water to boil.
  2. Place a plate of dumplings in the steamer and steam for 15 minutes. 
  3. If your dumplings are not completely unfrozen, add the cooking time to 25 minutes.

How to make pan-fry dumplings

  1. Add 1 tablespoon of cooking oil to a large skillet. Heat over medium-high heat and coat the skillet evenly.
  2. Add dumplings to the skillet. Sauté gently until the skin turns golden brown. 
  3. Add 2 tablespoons of water. Cover the lid and let it simmer for 3 minutes.
  4. Transfer to a plate and enjoy!

How to store dumplings

Making dumplings is like a project. And we always make them in bulk and freeze them for breakfast or lunch. But dumpling wrappers can be sticky in room temperature. So here’s how to store dumplings and prevent them from sticking:

  1. Put dumplings on a plate and sprinkle cornflour on top evenly.
  2. Place the plate in the freezer and let it sit for 20 minutes.
  3. Take the plate out. Now the skin of the dumplings should be tough enough.
  4. Transfer the dumplings to a container of your choice. You can also use a ziplock bag.
  5. Before cooking, put the dumplings back to room temperature for 20 minutes to unfreeze. Rinse them to remove the cornflour on the surface.

If you are making pan-fried dumplings, make sure to unfreeze completely before putting them on a pan.
