I grew up in Southern China, and I didn’t have much love for spicy food. Even my Mapo Tofu is non-spicy. But shredded cabbage is an exception. The chilies bring out the sweetness of the vegetable, making it irresistible.

This spicy cabbage stir-fry is something my friends in college swore by. There was a Hunan restaurant near the campus and this was their signature dish. I fell in love the first time I tried it.

So today, I will be sharing this easy and quick stir-fry cabbage with Chinese sausage. If you are vegan, feel free to switch the sausage with mushrooms.

What is stir-fry shredded cabbage?

The official name for this Chinese stir-fry cabbage is hand-ripped shredded cabbage or 手撕包菜 in Chinese. 

The stir-fry shredded cabbage is often cooked with garlic, chilies and some cured meat. In vegan restaurants, the meat is replaced by shiitake mushrooms or carrots

I use Chinese sausage in this recipe for its sweetness. You can also use preserved pork or fresh pork belly.

So if you are like me, you probably wonder why hand-rip the cabbage instead of chopping it with a knife

One chef of my local Chinese restaurant said that, by ripping the leaves off, every piece of cabbage is cut irregularly. Thus the leaves will soak up more of the flavor in the cooking process.

How to make Chinese cabbage stir-fry recipe

Ingredients

  • Half a cabbage, medium-sized
  • Chilies, 1
  • Chinese sausage, 1
  • Garlic, 4 gloves
  • Cooking oil, 1 tsp
  • Soybean paste, 1 tbsp
  • Rice vinegar, 1 tsp
  • Sugar, 0.5 tsp
  • Soy sauce, 1 tsp

Preparations

  1. Hand-rip the cabbage into small pieces. Rinse with water and dry with a kitchen towel.
  2. Remove the peel of the garlic. Mince finely.
  3. Cut the Chinese sausage into thin slices. Set aside for later.
  4. Chop the chilies finely.

Making shredded cabbage step-by-step

  1. On a wok or a pan, heat 1 teaspoon of cooking oil over medium-high heat.
  2. Add chilies and garlic to the pan and stir-fry until fragrant. 
  3. Then add Chinese sausage and stir-fry for 1 minute.
  4. Turn the heat to high and add the shredded cabbage. Keep stirring for 2 minutes. 
  5. Add 1 tablespoon of soybean paste, 0.5 teaspoons of sugar, 1 teaspoon of rice vinegar, and 1 teaspoon of soy sauce. Stir for another 3 minutes until the cabbage starts to soften.
  6. Transfer to a plate and enjoy.
