Daikon radish has many names: white radish, white carrot, Japanese radish, winter radish… In China, it is called Luo Bo (萝卜) in Mandarin or Lok Bak in Cantonese.

I always love Daikon radish. When I was a kid, my primary school served daikon radish with pork ribs for lunch. For Cantonese, the most common way to cook daikon is to braise with beef brisket. With the natural sweetness of the radish, meat like pork, beef, and chicken just tastes better.

I’ve also recreated a famous dim-sum recipe – daikon radish cake. My only problem? These recipes take 1 to 2 hours to make. And I don’t have that much time to spend in the kitchen on a busy weeknight.

But not this daikon radish meatball soup. It’s a fast soup recipe. It doesn’t cost hours to prepare or stew. 30 minutes of cooking time, just enough for the favors of radish and pork to combine. If you are looking for a one-pot dinner soup, you can also make the meatballs in bulk and add them to soup whenever you want.

How to make daikon radish meatball soup?

Ingredients

  • 1 Daikon radish
  • 500 grams of Ground Pork
  • 10 grams of Dried Shiitake Mushroom
  • 20 grams of Fresh Ginger
  • 1 Scallion
  • 1/2 tablespoon of Olive Oil

Meatball seasoning

  • 1/2 teaspoon of Five-spice Powder
  • 1/2 teaspoon of Salt
  • 1/2 tablespoon of Oyster Sauce (optional)
  • 1/2 tablespoon of Light Soy Sauce
  • 1 tablespoon of Cornflour

Preparations

I always love adding shiitake mushroom to ground pork for making pork patty, fillings for dumplings or bao, or in this case, meatballs. There’s a unique earthy flavor to it, and it makes a dish taste better.

Wash the dried shiitake mushrooms with running water. Put them in a bowl and pour warm water. Soak for 30 minutes until they soften. Remove the stem, squeeze out the water and dice them with a knife.

Mix the mushroom with ground pork. Then add five-spice powder, salt, oyster sauce, and light soy sauce. Stir the mixture with chopsticks or a spatular until all ingredients blend together.

Add cornflour and stir the mixture clockwise for 3 to 5 minutes. Press and shape the mixture in balls.

A secret to making the meatballs stick together is to stir until the mixture becomes a little gluey. That’s a sign that the flour blends with the meat properly so the meatballs won’t fall apart in the soup. The meatballs should be moist but not soggy. If they are too wet, add a bit of cornflour or regular flour.

Wash the fresh ginger and slice thinly.

Rinse scallion with running water. Remove the root and separate the white stem from the green part. Cut the white stem into 2-inch pieces and dice the green parts.

In a pot, heat olive oil in medium-high heat. Add ginger and sauté until fragrant.
